These Dairy-Free and Vegan-Optional pancakes will keep you full for longer thanks to the protein powder and granola ingredients. Slice up some bananas for toppings or get creative with blueberries and granola.
- 2 mashed bananas (ripe)
- 2 eggs (or applesauce, if you’d like to make this vegan)
- 3 tbsp Mooala Original Bananamilk
- 1/3 cup granola
- 1/3 cup protein powder (we used Hemp plant protein)
- Dash of cinnamon
- Dash of nutmeg
- Dash of salt
- 1/8 tsp baking powder
In a large mixing bowl, crack the two eggs and beat until evenly and thoroughly mixed with a light, smooth texture.
Next, Fold the mashed bananas into the eggs until roughly combined. Finally, Add the granola, protein powder, cinnamon, nutmeg, salt, and baking powder. Mix all the ingredients together well until a batter-like texture is formed. You’ll want to avoid lumps in your “batter” so your pancakes cook evenly.
Next, Heat a skillet over low to medium heat and scoop a pancake-sized dollop of the mixture onto the skillet. Cook for about 60 – 90 seconds per side.
Serve immediately and enjoy! Top with your favorite pancake toppings like syrup, bananas, or blueberries.
