What's better than looking at these healthy cookies? Eating them, of course. We modified this recipe, originally from the Minimalist Baker.
1 ¼ cups almond meal
¼ cup chocolate (We used cacao nibs)
½ cup dried coconut flakes
½ tsp baking powder
¼ tsp salt
1/3 cup date sugar
1 egg
3 Tbsp coconut oil, melted
½ tsp vanilla extract
½ cup Original Almond milk
Preheat oven to 375˚F. In a large mixing bowl, stir together almond meal, chocolate, coconut, baking powder, salt and sugar. In a separate bowl, beat egg. Whisk in the coconut oil, vanilla, and Mooala Original Almond milk. Add to dry ingredients and mix until just combined. Chill in the fridge for at least 30 minutes. Scoop out dough then flatten a little by pressing down. Bake until edges begin to brown, 7-10 minutes. Remove from oven and let cool before serving.
