These muffins are jam-packed with healthy ingredients
3 cups oats
2-3 scoops protein powder
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp sea salt
2 eggs
1 tsp vanilla extract
1/2 c unsweetened applesauce
1/2 c dairy-free yogurt
1 tbsp chia seeds
Toppings: coconut flakes, blueberries, almonds
Preheat oven to 350 degrees and grease muffin pan with oil.
Combine oats, protein powder, baking powder, cinnamon and sea salt.
In a separate bowl combine eggs, vanilla extract, applesauce, non-dairy yogurt, coconut oil, chia seeds, honey and Mooala Vanilla Bean Almondmilk.
Combine wet and dry ingredients, then divide batter evenly in cups.
Top the muffins with coconut flakes, blueberries and almonds.
Bake for 15-20 minutes, then let cool.
