Breakfast or Decadent Snack
About this Recipe
Two other key things to the waffles: almond flour can be grainy, so we recommend blending the batter. Not absolutely required, but recommended!
And second: let the batter sit for a few minutes if you can and be patient while you cook them on slow! Low and slow is super key here.
- 2 eggs
- 1/3 cup – Mooala Vanilla Crème Keto Mylk
- 1/4 tsp – Vanilla Extract
- 1 tbsp – Coconut Oil
- 1 1/4 cup – Almond flour
- 1 tsp – Sea Salt
- 1 tsp – Baking Powder
- 2 tbsps – Confectioners Sugar or Monkfruit Sweetener
- Mix-ins – we recommend nuts, chocolate chips or fruit!
Mascarpone Crème Ingredients
- 2 tbsps – Mascarpone Cheese
- 2 tbsps – Ricotta Cheese
- 1 Lime
- 1/2 Lemon
- 1 – 2 tbsps – Sweetener of Choice
Blend two large eggs, 1/3 cup of Vanilla Creme Keto Mylk, splash of vanilla extract and 1 tablespoon melted coconut oil.
Blend again. It’ll be a little liquidy at this point but let it sit and it’ll thicken up a bit. Feel free to add nuts, chocolate chips or fruit.
If you want to go the extra mile, we recommend whipping up the lime mascarpone crème. You just mix the above ingredients, and if you like you can add more fresh berries, syrup, cinnamon sugar or anything else you want.
Then add 1 1/4 cup extra fine almond flour, sea salt, 1 tsp baking powder and two tablespoons of confectioner’s sweetener (I prefer Monkfruit, but use what you like best!).
Once you’re ready to make them, on low-medium heat add your batter to an oiled or buttery pan and cook. Flip when bubbly. Remove and enjoy.
