About this Recipe

Using Mooala’s Organic Vanilla Bean Almondmilk, this Oatmeal Casserole recipe is a delicious, dairy-free way to start your day. What’s even better is that you can bake it ahead of time and grab it on your way out the door throughout your busy week.

  • 4 eggs
  • 1 cup sugar (we used date sugar which will make it darker)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 2 tsp vanilla extract
  • 2 cups Mooala Vanilla Bean Almondmilk (That’s just what we used, they’re all fair game!)
  • 1 stick (8 tbsp) coconut butter
  • 6 cups quick oats
  • 1+ cups dairy-free chocolate chips
  • 1+ cups dried cranberries

Step 1

Preheat the oven to 350˚F. Butter a non-stick baking dish (we went with a glass pie dish).

Step 2

Microwave butter until melted, start with 1 minute and stir.

Step 3

Whisk eggs in a large bowl. Add sugar, baking powder, salt, cinnamon, and vanilla and mix until smooth.

Step 4

Add Mooala Vanilla Bean Almondmilk and melted butter to the egg mixture and mix until combined.

Step 5

Add the oats to the egg mixture and stir until combined. Pour in chocolate chips and cranberries.

Step 6

Put the oatmeal mixture in the baking dish. Put in the oven and bake for 40-45 minutes, until fully set.
