Banana Protein Pancakes just feel like a healthy Saturday morning breakfast. These Dairy-Free and Vegan-Optional pancakes will keep you full for longer thanks to the protein powder and granola ingredients. Slice up some bananas for toppings or get creative with blueberries and granola.
- 2 mashed bananas (ripe)
- 2 eggs (or applesauce, if you'd like to make this vegan)
- 3 tbsp Mooala Original Bananamilk
- 1/3 cup granola
- 1/3 cup protein powder (we used Hemp plant protein)
- Dash of cinnamon
- Dash of nutmeg
- Dash of salt
- 1/8 tsp baking powder
Step 1
In a large mixing bowl, crack the two eggs and beat until evenly and thoroughly mixed with a light, smooth texture.
Step 2
Next, fold the mashed bananas into the eggs until roughly combined. Finally, Add the granola, protein powder, cinnamon, nutmeg, salt and baking powder. Mix all the ingredients together well until a batter-like texture is formed. You'll want to avoid lumps in your "batter" so your pancakes cook evenly.
Step 3
Next, heat a skillet over low to medium heat and scoop a pancake-sized dollop of the mixture onto the skillet. Cook for about 60 - 90 seconds per side.
Serve immediately and enjoy! Top with your favorite pancake toppings like syrup, bananas, or blueberries.
