About this Recipe
We like to keep things simple, especially our recipes and this healthy cookie recipe is no exception. This healthy, dairy-free, vegan cookie recipe using Mooala's Organic Original Almondmilk allows you to indulge your sweet tooth, guilt-free.
- 1 1/4 cups almond meal
- 1/4 cup chocolate (We nused cacao nibs)
- 1/2 cup dried coconut flakes
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup date sugar
- 1 egg
- 3 tbsp coconut oil, melted
- 1/2 tsp vanilla extract
- 1/2 cup Original Almond Milk
Step 1
Preheat oven to 375˚F. In a large mixing bowl, stir together almond meal, chocolate, coconut, baking powder, salt, and sugar.
Step 2
In a separate bowl, beat egg.
Step 3
Whisk in the coconut oil, vanilla, and Mooala Original Almondmilk. Add to dry ingredients and mix until just combined.
Step 4
Chill in the fridge for at least 30 minutes.
Step 5
Scoop out dough then flatten a little by pressing down.
Step 6
Bake until edges begin to brown, 7-10 minutes. Remove from oven and let cool before serving.
