Up your breakfast game with vegan, gluten-free mini pancake cereal made with Oatmilk
2 c Mooala Coconut Oatmilk
2 tbsp coconut oil (or other vegetable oil)
1 tbsp maple syrup
1 tsp vanilla extract
1 ¼ c coconut flour
1 tbsp baking powder
¼ tsp salt
¼ tsp cinnamon
Thoroughly mix dry ingredients together in a bowl.
Mix wet ingredients separately, then incorporate the wet ingredients into the dry ingredients by hand, slowly. Do not over mix so the batter stays light and fluffy – just like your favorite big pancakes. Some lumps are okay.
Add the batter to a ziplock bag, and snip off a small corner.
Warm a non-stick frying pan to medium, and spray with oil.
Squeeze the batter out of the bag onto the pan in dime-sized circles.
Wait for the batter on bottom to cook completely, then flip the mini-pancakes so they are browned on both sides and cooked throughout.
Transfer to a cereal bowl, pour in your favorite Mooala plant-based milk, and enjoy!
