TikTok trends gave us this latest recipe, Mini Pancakes Cereal, but we’ve made it dairy-free and vegan optional with our Unsweetened Coconut Oatmilk. We’ve even seen TikTokers add berries on top or sliced strawberries. For crispier pancakes, make sure the individual pancakes are small and thin. For fluffier and softer pancakes, aim for larger dollops of pancake pieces.
- 1 cup flour of choice
- Sweetener to taste
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup Oatmilk
- 2 tbsp of melted dairy-free butter substitute
- 1 tsp pure vanilla extract
- 1 large egg (or egg substitute for Vegan)
Combine the flour, sweetener, baking powder, and salt in a large bowl. Mix well until evenly combined. Add the Oatmilk, melted butter substitute, vanilla extract, and the egg.
Using a whisk, combine the wet and dry ingredients. Ensure the egg is beaten thoroughly and mixes evenly with the wet and dry ingredients. Make sure your mixture is lump-free before moving on to the next step. If your batter is too thick, gradually add 1 tablespoon of Oatmilk until it reaches the desired consistency.
Let the batter rest for a few minutes while you prepare the griddle or non-stick pan. Lightly grease with a little butter substitute or cooking oil.
Pour pancake batter into a squeezable bottle or pour into a ziploc bag and cut a tiny hole in the corner of one of the bottoms. This will make your pancake pieces much easier to size.
Next, squeeze small dots of batter onto the hot pan. Cook the pancake pieces until the tops form small bubbles. Flip the pieces with a spatula or tongs to cook the top-side until golden or crispier (based on your preference). Remember, this will be a cereal so slightly crispier than your normal pancake preference will ensure you have a good Mini Pancakes Cereal bowl!
Repeat with the remaining amount of batter and grease in between sets. Pour your finished mini pancakes into a bowl and pour over Mooala Coconut Oatmilk. Top with honey, maple syrup, fruit, or enjoy plain!
